Wahoo Ceviche

Ceviche is a simple dish that originated in Peru and is made with fresh fish lightly marinated in citrus juice. In this recipe I'm using wahoo, which is a round fish (meaning it has four loins or fillets) and is almost as fun to say as it is to eat. Found in tropical and subtropical waters all over the world, this member of the mackerel family is highly regarded by chefs and their guests for its firm white flesh and mild flavor. Wahoo is a great fish for this simple ceviche because it doesn't overcook easily in the citrus juices and has a great firm texture. If no wahoo is available another medium to firm white fish can be used like snapper.

1 pound fresh wahoo, skin removed

1 orange, segmented

1 lime, juiced

2oz Don Julio Anjeo tequila

¼ red onion, shaved

¼ cucumber, seeds removed and diced

½ pint cherry tomatoes, quartered

 ½ jalapeno or habanero pepper (optional)

salt

sugar

small hand full of cilantro, chopped

 

-segment the orange, reserving the segments and the liquid in separate bowls

-juice the lime and mix with the juice from the orange

-cut the wahoo into small cubes about the size of your fingernail

-in a bowl marinate the wahoo with the citrus juices and tequila until it starts to “cook” (8-10 minutes)

-add the citrus segments, diced cucumber, slices of cherry tomato and shaved red onion, then season with salt and sugar to taste

-for a little bit of heat, add some finely diced jalapeno or habanero pepper

-fold in the chopped cilantro last minute

-remove the mixture from the citrus juice, straining off any excess and place into a serving bowl

- serve with fresh tortilla chips, and more tequila
