For 20 years Dylan has been engrained in the fabric of the food and beverage industry, cutting his teeth in all manner of establishments from the temples of haute cuisine and exclusive resorts, to no frills eateries and dive bars around the world.
Originally from Canada, Dylan was born of a hard-working family that instilled in him the value of working with your hands and building something people can use and enjoy. Ever the tinkerer, Dylan views food as a contstantly evolving medium to express emotion, pleasure and creativity while simultaneously nourishing guests both physically and mentally with dishes that are born of the mind, evolved in the heart and brought to life by the hand.
After honing his culinary skills in Toronto, Muskoka and Halifax Dylan spent nearly a decade jet setting across the globe researching cuisines and cultures in Europe, Asia, Caribbean as well as North and South America before settling in the Cayman Islands.
The Entrepreneur.
Dylan started his first food & beverage consulting business Prime Consulting in the Cayman Islands in 2017. Prime quickly expanded with a private chef and catering division (Prime Kitchen), an import and distribution division (Prime Purveyors) and a hospitality consulting division (Prime Consulting).
In 2020 Dylan opened Carnivore Premium Meats, Cayman’s premier bespoke butcher shop and deli offering Prime grade beef, game meats, heritage breed pork, local organic chicken, premium house made sausages and hand crafted seasonings and accompaniments. Carnivore also features an evolving menu of signature hot dishes, an in-house dry aging chamber and house made charcuterie specialties.
The Host.
In 2019 Dylan made his major television debut as the host of Food Network Canada’s Fire Masters, a sizzling cooking competition show based around live fire cooking. Now three seasons later, Fire Masters has aired on multiple networks (Cooking Channel US, Blaze TV UK) in several countries. As comfortable on set as he is in the kitchen, Dylan quickly made an impression as a knowledgeable, reliable and passionate television host.
Dylan has also become highly sought after for live and virtual cooking demonstrations and classes for private and corporate events, retreats, festivals and various Departments of Tourism for multiple countries.
The Writer.
From his years on the road up to present day, Dylan has contributed to a library of print and digital publications with recipes and articles about food, drink, travel and lifestyles from all over the world. From street food in Saigon to ultra-fine French dining in China, scuba diving with manta rays on the island of Komodo to obscure wine regions in Mexico – Dylan looks off the beaten track to tell the stories of interesting people, unique places and delicious food.
